Luxury Surf and Turf Recipe

Ready in under twenty minutes, our luxury surf and turf recipe is easy to prepare. With a prime 6 oz fillet steak and a premium lobster tail, it is great for any celebration at any time of the year.

The prime fillet steak only needs some sea salt and cracked black pepper. You may also want to try our grilled lobster tail recipe to really enhance the dish?

Luxury Surf and Turf Recipe Ingredients

  • Prime 6oz fillet steak
  • Raw lobster tail
  • Small wedge of onion
  • 2 crushed garlic cloves
  • White wine, ideally use Pinot Grigio or Chardonnay where possible
  • Unsalted butter
  • Sea salt
  • Cracked black pepper
  • Finely chopped garlic clove
  • Fresh chopped parsley
  • Honey
  • Lemon wedges (optional)

Luxury Surf and Turf Recipe Method

Thoroughly defrost the fillet steak and lobster tail in a refrigerator for 24 hours.

For the lobster tail, once defrosted take a sharp pair of scissors to the lobster tail and cut down through the centre of the tail shell to open it up, leaving the tail fan intact.

Then add a small wedge of onion and two of the crushed garlic cloves in the bottom between the shell and the meat which will steam the flavour through during the cooking process.

In a separate bowl mix some of the white wine, unsalted butter, finely chopped garlic, finely chopped parsley and honey and add a pinch of sea salt and black pepper

Add as much of this sauce inside the shell as well as over the top of the lobster before cooking.

Then place the lobster tail under a preheated medium grill, or on a BBQ if dining al fresco, and grill for 12 to 14 minutes until the lobster meat is opaque and the edges are slightly charred, occasionally spooning the juices and seasoning over the lobster meat.

The lobster shell will turn a vivid red and the juices that seep from the shells will start to coagulate when cooked.

For the fillet steak, season with sea salt and black pepper, and pre-heat a frying pan, cast iron skillet, griddle or your BBQ.

If cooking in the preheated frying pan, add some unsalted butter and as soon as it is melted, place the steak in and leave to cook on one side for the following times;

  • 1 minute if preferred blue
  • 2 1/4 minutes if rare
  • 3 1/4 minutes if medium rare
  • 4 1/2 minutes if medium

If you prefer your steak well done you can leave it to cook a little longer. However, remember that fillet steak is best when not over cooked.

Turn the fillet steak over and cook as you did above on the other side, spooning over the butter occasionally.

When using a cast iron skillet or griddle, butter is not needed, but the cooking times suggested above should still be used. You can rub a little olive oil on both sides if preferred.

Take the steak out of the pan, season again if preferred and leave to rest on a board or warm plate for about five minutes.

Luxury Surf and Turf Recipe Serving Suggestion

Garnish with a fresh lemon wedge and serve with some buttery new potatoes, fresh asparagus or tender stem broccoli or another of your preferred vegetables.

Equally serve with some home made hand cut chips, battered or breaded onion rings, garden peas, a grilled tomato half and some button mushrooms and a fresh lemon wedge.
