Within two hours of the live lobster being caught it is Individually Quick Frozen (IQF) on board the fishing vessel.  This maintains all the freshness and flavour to give you that freshly caught from the sea taste.

Our lobster tail meat is firm textured, yet smooth and soft to bite and has a delicate sweet flavour.  Tasting exactly like a cross between crab and shrimp.  Although it is a bit lighter and sweeter tasting than crab. The shell is also easy to remove.
